Quick zucchini side dish

An abundance of zucchini means that this heavenly side dish is a snap.

Just slice a zucchini in half and season with salt and an herb of your choice (I recommend oregano or za’atar). Grill the zucchini until charred, then remove from the grill and chop. Place in a bowl and toss with minced garlic and chopped Italian parsley**. Drizzle with olive oil and lemon juice. Delicious!

**Or parsley, mint, basil—any fresh herb! Or a mix of the three.
