Olive Oil Mint Sauce

The perfect accompaniment with lamb—see Lamb Skewers for a delicious dinner.

Mint Sauce

Makes ½ cup (125 milliliters)

Blend all ingredients in a mini-processor.

1/3 cup (79 milliliters) mint leaves, lightly packed
1/4 cup (60 milliliters) parsley leaves, lightly packed
1 1/2 tablespoons (22.5 milliliters) fresh lemon juice
5 tablespoons (75 milliliters) extra virgin olive oil
1 tablespoon (15 milliliters) Greek yogurt
1/4 teaspoon (1 1/4 milliliters) Dijon mustard
salt and pepper to taste
