Ravioli with Brown Butter Sage Sauce

Yum! Tender pasta pillows tossed in nutty brown butter with crispy sage leaves, creating a simple yet luxurious Italian classic. It pairs beautifully with fresh, store-bought ravioli—especially pumpkin, cheese, or spinach-ricotta varieties—or gnocchi, making it a quintessential choice for holiday meals.
Ravioli or Gnocchi with Brown Butter Sage Sauce
Serves 4
Prep and cook time: 5-6 minutes
Ingredients
3/4 pound (340 grams) ravioli or gnocchi, cooked according to directions
1/2 cup (113 grams) unsalted butter, cubed
20 sage leaves, patted dry after washing
To serve
Parmesan cheese, grated
cracked pepper
Melt butter over medium heat in a light-colored skillet. As soon as the butter begins to foam, add sage leaves and swirl. Continue to occasionally swirl—not stir—as the butter turns walnut brown. Regulate the heat so the milk solids, which will cook faster and fall to the bottom of the pan, don’t burn. As soon as the butter is nutty brown, remove from the heat. Use tongs to carefully place crisp sage leaves on a small plate.
Bring a pot of water to boil. Salt the water and cook pasta according to directions. The butter sauce will be ready in 4-5 minutes and can wait for the pasta, but the pasta can’t wait for the sauce!
Drain pasta and toss in the skillet with butter. Divide it among the serving plates, gently place 5 sage leaves on each plate, then sprinkle with cracked pepper and Parmesan. So lovely!
